I seem to be able to only disable on or the other, but not both. Is this true?
(Using Thinkpad T43 2686)

Ultranav pointer and trackpad: Can both be disabled?
Did you try going to: Start > All Programs > Access IBM > ThinkPad Configuration? From there you can disable the Touch Pad and the TrackPoint by clicking on the two separate icons on the left.
I did not try to disable both, because I would be lost without some kind of pointer (I don't have all the keyboard shortcuts memorized).
